Job Title: Executive Pastry Chef

Job Summary:
We are seeking an experienced and creative Executive Pastry Chef to lead and oversee the pastry department of our culinary operation. The ideal candidate will have a strong passion for the art of pastry and baking, with proven expertise in creating exceptional desserts, breads, and confections that elevate the dining experience. This role is responsible for menu development, staff training, maintaining high-quality standards, and ensuring the profitability of the pastry department.

Key Responsibilities:

  • Menu Development:

    • Create and innovate seasonal pastry menus, dessert offerings, and baked goods that align with the overall culinary vision and brand standards.
    • Stay up to date with industry trends and incorporate modern techniques while honoring classic pastry traditions.
    • Collaborate with the Executive Chef and other culinary leaders to design and pair desserts with menus, wine, and beverage programs.
  • Operations Management:

    • Oversee daily operations of the pastry kitchen, ensuring efficiency, cleanliness, and adherence to health and safety regulations.
    • Monitor inventory and manage the procurement of ingredients, ensuring cost-effective and quality purchasing practices.
    • Develop and maintain budgets for the pastry department, controlling costs while maximizing revenue.
  • Team Leadership:

    • Recruit, train, and mentor pastry team members, fostering a positive and collaborative work environment.
    • Schedule and manage pastry staff to ensure smooth kitchen operations and timely delivery of all items.
    • Conduct regular performance evaluations, providing constructive feedback to team members to support their growth.
  • Quality Assurance:

    • Ensure consistency, precision, and excellence in all pastry items, meeting or exceeding guest expectations.
    • Conduct regular tastings and quality checks on all products leaving the pastry kitchen.
  • Creativity & Innovation:

    • Develop unique, visually stunning desserts and presentations for à la carte menus, banquets, and special events.
    • Contribute to the success of promotional events, holidays, and themed menus with creative pastry concepts.

Qualifications:

  • Proven experience as an Executive Pastry Chef or Pastry Sous Chef in a high-end restaurant, hotel, or bakery.
  • Extensive knowledge of pastry techniques, baking processes, and chocolate and sugar work.
  • Strong leadership and team management skills, with the ability to inspire and train staff.
  • Creative vision and an eye for detail in design, flavor pairing, and presentation.
  • Excellent organizational and time-management skills.
  • Ability to work in a fast-paced, high-pressure environment.
  • Knowledge of food safety and sanitation regulations.
  • Culinary degree or equivalent experience preferred.

Physical Requirements:

  • Ability to stand for extended periods and lift up to 50 pounds.
  • Flexibility to work evenings, weekends, and holidays as needed.
